Desserts and Salads
Author: Gesine Lemcke
ISBN-10: 1410100944
ISBN-13: 9781410100948
Published: 2002-12
Publisher: Fredonia Books

Book Description:
Vintage Victorian cookbook with almost a thousand recipes from puddings and ice cream to soufflés and pies. This turn-of-the-century publication is interesting in many ways. The forward is quite severe, urging readers to "read the recipes herein contained carefully and thoughtfully before attempting the making of any of them" and to measure exactly and to keep trying when failure strikes. Finally the author espouses that "You should always bear in mind that honest work is never lost and the reward must come in the end." A fascinating reflection on the times and the food habits of the American household. Originally published in 1892, this is a reprint of the 1918 edition, which added an appendix, and a chapter of "war recipes." Mrs. Lemcke was well known for her lectures and writings on cooking, and was Principal and owner of the Brooklyn and New York Cooking Colleges.

Salad for Dinner: Complete Meals for All Seasons
Author: Jeanne Kelley
ISBN-10: 0847838250
ISBN-13: 9780847838257
Published: 2012-03-27
Publisher: Rizzoli

Book Description:
A celebration of contrasts in color, flavor, and texture—an artfully prepared salad is one of the most appealing dishes to eat, engaging all the senses. It is a basic culinary fact but often overlooked: a salad packs the most flavor because the dressing coats every bite. And with the right combination, a salad can be a full meal in itself. We all know it is healthier to eat more vegetables and whole grains. But how do you do so on a daily basis? This book reframes the question: Why not make greens the foundation of the plate? Smart, imaginative ideas abound: kale with lemon, parmesan, and almonds; Indonesian chicken salad with pineapple slaw; and salmon with quinoa, sorrel, and yogurt. There are super-hearty salads to satisfy even the biggest appetites, such as Korean barbecue beef salad; duck confit with fingerlings and frisee; and buttermilk fried chicken salad. These recipes help us break out of the “meat-and-three” box, leading to a new way of thinking about dinner.
